The Gaucho is the equivalent to the North American "Cowboy". Like the North American word cowboy, the term often connotes the 19th century more than the present day; then gauchos made up the majority of the rural population, herding cows and practicing hunting as their main economic activities.

Gaucho's were generally nomadic that lived on the pampas, the vast plains of the southern Brazil. A unique type of cooking meat was inspired by the gaúcho digging a pit on the ground and starting an open fire where were roasted large pieces of meat in large wood skewers that were shared in thin slices of each type of meat with all the persons around the fire.
